Now that it is summer it’s hard to chow down on some hot and heavy food when you’re dying from the heat wave. My solution is to increase my vegetable intake and decrease the rest. On my plate I have some fresh off the grill zucchini, and chicken, oven baked mini potatos and a super fresh salad with a light balsamic dressing.
I really love the grilled zucchini! It’s juicy and fresh but also adds a bit of sweetness to the meal.
